So Many Eats Lately and Hayley’s Hump Day Hemp Hummus

Happy Hump Day!

Lets talk food and then I have a Hayley’s Happy Hump Day Hemp Hummus. What is another “H” word we can use?

First: here is a look into my kitchen from this past week: 

These beet cookies I made with extra beet puree from the Breeze Bar Cookie Bars. IMG_2218

 I made this asparagus, cauliflower soup…. It was not a winner. I had high hopes but not every recipe try can be good. You win some, you loose some.  IMG_2244 In the process.. I didn’t even take a picture of the finished product, not worth it. Lol! 

Roasted chickpeas. Yum! I just tossed these babies in balsamic vinegar and roasted them in the oven. I used them as a salad topper and that asparagus cauliflower soup.  IMG_2253

 Macadamia nuts were on sale!  IMG_2272

So my nut butter this week is pretty special: IMG_2278 I added in some special ingredients to make this nut butter extra fancy and delish, details coming soon! 

Colorado weather makes outfit planning hard. One day it snows, the next day it is sunny, next day: freezing. I took advantage of the Sunday sun however and made a yummy smoothie!  IMG_2282 In my vitamix: 1/2 frozen banana, macadamia nut butter(homemade), 2 dates, plant-based chocolate protein powder, chia to make smoothie thick! Almond milk, blended topped with crunchy rice cereal, eaten with a spoon like slightly melted ice cream!

For my large batch of make ahead steel-cut oats this week I made a pumpkin pie version! Uh yum.  IMG_2393 I probably owe you guys a recipe for this too.

Hayley's Hemp Hummus
A super yummy, perfectly textured hummus.

Ingredients
  1. 1 can chickpeas drained
  2. 1/4 cup hempseed
  3. 1 tablespoon tahini
  4. 1/4 cup water
  5. 1 tsp onion powder
  6. 1 tsp garlic powder
  7. 1/4 tsp salt
Instructions
  1. Add all ingredients to a blender or food processor except the water. Start to process and add water slowly to desired consistency.

I then made a huge plate of vegetables to facilitate my hummus eating. The spoon to vita-mix to mouth becomes inappropriate after a while.  IMG_2311

Lastly, the best thing I ate this past week? These enchiladas from last night: IMG_2379

Oh one last thing, yesterday I found this at my doorstep: IMG_2400

Christmas?! Not quite but it sort of felt like it for a food lover like myself. A delivery from my friends at Boulder Brands! IMG_2399 I can’t wait to start trying and creating good things with all this wonderful product!  IMG_2403 I may have broken into this box of Salted Caramel Cashew cookies right away. I tried these at ExpoWest and just about died. So heavenly. I have never tasted a gluten-free cookie with this texture. Soft, fluffy and salted caramel? Sold!  

I am off to have a happening hump day!
